It is a popular corn variety prized for its striking deep blood-red to maroon kernels on large ears. There are 2 to 6 ears per stalk. These ears weigh approximately ½ pound. You can eat it fresh when young as corn on the cob or use it to make flour and cornmeal. The name is often attributed to kernels that resemble blood spatters on a butcher’s apron.
